Cake Day

I woke up feeling restless again this morning and so I decided to bake a cake.

Thumbing through my recipe book, I realized I hadn’t made my pumpkin caramel cheesecake in years.  It’s finicky to make, but today I was in the mood for something different.

I’m still feeling like I’m stuck in a rut and wanting winter to be over so I can start entertaining on a regular basis. One thing about being out of the city, it’s not as easy to spontaneously invite people over. I hate driving in crappy weather and so I always hesitate to ask other people to do so.

But with it only being February 1st, there’s still a few months to go before the warmer weather arrives.

So today I’ll have to entertain myself by baking my cheesecake.

After my morning coffee, I popped into town to do my weekly grocery shopping and pick up all the necessary ingredients. A few hours later, my cake was coming out of the oven.

Hubby and I will enjoy it tonight and I’ll take the rest into the office tomorrow.
